Go ahead and de-rib the leaves. I usually just use my hands to tear them off, then place them in a bowl. Next, get some extra virgin olive oil. Drizzle a good amount of olive oil over your kale in the bowl. The next part is tedious, but can be relaxing at the same time. This part is crucial to a good kale chip recipe. Use your fingers to go over each kale one by one, making sure the entire leaf is covered with oil!
